The Paliria baked giants beans perfectly match with spinach! In this version, we have added groundnuts to enhance their flavor and to make them more filling and we have served them on crispy bruschetta!
1 pack of 280g Paliria Giant Beans in onion & tomato sauce
400 g spinach leaves, coarsely chopped
1 small leek, finely chopped
2 spring onions, finely chopped
2 tablespoons chopped dill
2 tablespoons olive oil
Zest of 1 lemon
4 slices of rustic bread baked with a little olive oil
1 tablespoon groundnuts
Salt & pepper
1. In a deep frying pan, add the olive oil along with the onion and leek for 2 minutes until they are glossy and then add the spinach.
2. Allow its volume to drop and join with the rest of the ingredients, stirring gently.
3. Allow 7 minutes more and remove from the heat. Add the lemon zest and dill and mix.
4. Divide the spinach over the bread slices and top with the baked giant beans. Sprinkle with groundnuts, add fresh pepper and, if desired, add extra lemon juice.
For a more spicy version, you can add a small chopped hot pepper to the spinach! Also, if you want, as soon as you remove the pan from the heat with the spinach, add a little grated feta cheese and stir so that it melts with the heat!
