For an alternative fasting dish, serve the Paliria quinoa dolmas on grilled bread with fish roe cream. This delicious combination will take you off!
For the fish roe dip:
70 g white fish roe
Juice from 1 lemon
50 g bread, soaked
½ dry onion (small)
150 ml. sunflower oil & 50 ml. olive oil
For serving:
4 slices of rustic bread
2 tablespoons olive oil
1 pinch oregano & salt
1. Prepare the fish roe dip by mashing the fish roe for a few minutes along with the lemon juice.
2. Add the bread, the onion and continue to mash until all the ingredients are homogenized together.
3. Continue beating slowly adding olive oil and sunflower oil until the fish roe thickens and becomes fluffy. Then, refrigerate until you use it.
4. Sprinkle the slices of bread with olive oil, oregano and salt and bake in a preheated oven for 8 minutes until golden brown.
5. Serve by putting a hearty dose of fish roe dip on each slice of bread and top it with two stuffed vine leaves with tricolor quinoa.
