We propose to prepare for your guests, a risotto with Paliria Greek Island Chickpeas! The traditional rice and chickpeas dish, as cooked by our grandmothers, in this version gets a new dimension and becomes even more delicious!
1 package of 280g Paliria Greek Island chickpeas
1 spring onion finely chopped
2 tablespoons olive oil
100 g yellow rice
250 ml. vegetable broth
Juice from 1 lemon
2 tablespoons chopped dill
Salt & pepper
1. In a deep frying pan, add the olive oil and the onion and sauté for 1 minute until the onion is translucent.
2. Next, add the rice, stir it until it becomes translucent as well and then add the broth, salt and pepper.
3. Let it boil until the liquid is absorbed, remove from the heat, add the Paliria Greek Island Chickpeas, dill and lemon juice, mix and cover with a towel.
4. We let it sit for 10 minutes before serving, so that it can thicken.
Add some chopped mint to the rice for extra flavor to the dish!
