For a full vegetarian meal, accompany the stuffed vine leaves with rice & herbs, with tomato salad!
4 oil rusks
2 tablespoons olive oil
For the salad:
1 package of 280g Paliria Dolmas, stuffed vine leaves with rice & herbs
1 chopped tomato
2 spring onions, finely chopped
1 tablespoon chopped parsley
1 tablespoons spearmint, finely chopped
1 cucumber cut into small cubes
2 tablespoons olive oil
Juice from 1 lemon
1 teaspoon spicy mustard
Salt & pepper
1. Put the rusks along with the olive oil in a mixer and crush them until you achieve a thick paste.
2. Divide the amount of rusk into a 20 cm form pan with a detachable base and press with a spoon so that it is even.
3. Refrigerate until you prepare the salad.
4. In a bowl mix all the ingredients of the salad along with the olive oil, lemon and mustard and mix well.
5. Spread the salad on the base of rusks and add the dolmas!
In case that you have not got any limitations in your diet, feta cheese is an ideal much for this plate!
